Scheme 1 demonstrates the synthesis of xanthan gum graft copolymers, ranging from [XG-g-PNVP-1] to [XG-g-PNVP-5], through a thiourea/peroxy mono sulfate redox pair in a free radical polymerization process. Specifically, the hybrid [XG-g-PNVP-D] is designed to encapsulate 15 mg of levofloxacin for use in drug delivery. The synthesis process illustrated involves XG reacting with N-Vinyl-2-Pyrrolidone, catalyzed by peroxy mono sulfate (PMS). This reaction results in the creation of the graft copolymer XG-g-PNVP, with pyrrolidone units attached to the XG backbone. Scheme 2- synthesize xanthan gum by Glucose

Xanthan gum (XG) can be synthesized by reacting starch and glucose with a solvent mixture containing betaine, magnesium sulfate at a 1:1 ratio, ferrous sulfate, and dipotassium phosphate. This reaction is carried out over a period of 48 hours, at a neutral pH value of 7 and a controlled temperature of 30°C. For purification of the resultant XG, chromatographic techniques such as column chromatography are used, or crystallization methods can be applied, depending on the compound's solubility and stability profiles.

Figure 2 depicts the decrease in viscosity with rising shear rates in a foam solution infused with xanthan gum (XG), characteristic of non-Newtonian fluids displaying shear-thinning behavior. The viscosity is shown to increase with the concentration of XG when the shear rate is constant, demonstrating its efficacy as a thickening agent. The plot reveals how viscosity changes for XG solutions at various concentrations—0%, 0.1%, 0.2%, and 0.3%—across shear rates from 1 s^-1 to 10 s^-1. At 0.3% concentration, viscosity notably falls from above 2000 mPa·s to approximately 500 mPa·s, with similar yet more moderate trends for the 0.2% and 0.1% solutions. The solution without XG registers the least viscosity. The data clearly indicates that as XG concentration increases, there's a more pronounced viscosity decrease at higher shear rates.

Xanthan gum (XG), produced by the Xanthomonas campestris bacterium, is composed of a cellulose-like main chain with β-(1-4) linkages connecting glucose molecules. Trisaccharide branches of mannose-glucuronic acid-mannose are attached to every other glucose in the backbone. Modifications include pyruvate at the mannose terminals and acetylation within the chain. Such distinctive molecular architecture imparts remarkable thickening and gelling capabilities to XG, rendering it a prized ingredient for texture enhancement in the food sector and as a stabilizing agent in the petroleum industry.
